Sage

This sun-loving herb is a friend to insects and bees and grows well in pots both indoors and outdoors. Pop your pencil in a pot and be patient – it can take just over three weeks for the first shoots to grow. As sage loves to soak up the sun, it’s a good idea to plant your pencil in the late spring to get the best results.

How to use it 

Sage has a strong peppery taste and is great with beans, strong cheeses, tomatoes, and pork. Chop fresh leaves and mix with olive oil and salt for a great herb rub, marinade, or dressing, or mix it with clarified butter and toss with pasta or blanched veggies.

The best thing about sage: watching the bees flock to their flowers.
